Ingredients
1 can (15 oz) pure pumpkin puree
16 oz mascarpone cheese, softened
1 cup heavy whipping cream
1/2 cup granulated sugar
1 tsp vanilla extract
2 tsp pumpkin pie spice
1 package (7 oz) ladyfinger cookies
1 1/2 cups strongly brewed chilled coffee
Optional: Cocoa powder or cinnamon for dusting
Instructions
Beat the heavy whipping cream and sugar in a large bowl until stiff peaks form.
In a separate bowl, whisk together the softened mascarpone, pumpkin puree, vanilla extract, and pumpkin pie spice until smooth.
Gently fold the whipped cream into the pumpkin mixture until fully combined.
Quickly dip each ladyfinger into the chilled coffee, ensuring they do not get too soggy.
Arrange a single layer of dipped ladyfingers at the bottom of an 8×8 inch baking dish.
Spread half of the pumpkin cream mixture over the ladyfingers.
Repeat the process with another layer of dipped ladyfingers and the remaining cream.
Cover with plastic wrap and refrigerate for at least 4 hours before serving.
Dust with cocoa powder or cinnamon just before serving.
Notes
Store leftovers covered in the refrigerator for up to 3 days. If ladyfingers are unavailable, thinly sliced pound cake works as an excellent substitute. Ensure the mascarpone is at room temperature before mixing to achieve the smoothest texture.
