2 cups all-purpose flour
1 cup granulated sugar
1/2 cup softened unsalted butter
2 large eggs
1 cup Greek yogurt
1 tbsp ground ginger
1 tsp cinnamon
1/2 tsp ground cloves
2 tbsp fresh orange zest
1 tsp vanilla extract
1 tbsp baking powder
1 pinch of salt


Instructions

Preheat your oven to 350°F (175°C) and grease your cake molds lightly with butter or non-stick spray.
In a large bowl, cream together the softened butter and sugar until the mixture is light and fluffy.
Whisk in the eggs one at a time, followed by the vanilla extract and fresh orange zest until well combined.
In a separate bowl, whisk together the flour, baking powder, ginger, cinnamon, cloves, and salt.
Gradually fold the dry ingredients into the wet mixture, alternating with the Greek yogurt, until the batter is smooth.
Divide the batter evenly among the molds and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool in the pan for 5 minutes before transferring to a wire rack.

Notes

Keep these cakes in an airtight container at room temperature for up to 3 days, or freeze them for up to a month. Always use freshly grated orange zest to ensure the brightest citrus flavor and avoid the bitter white pith. If you are out of Greek yogurt, sour cream makes a perfect 1:1 replacement for an equally moist result.
