2 lbs boneless, skinless chicken breasts
2 cans (15 oz each) Great Northern beans, rinsed and drained
1 can (4 oz) diced green chiles
1 medium yellow onion, finely diced
3 cloves garlic, minced
4 cups chicken bone broth
1 tsp ground cumin
1 tsp dried oregano
1/2 tsp chili powder
1/2 cup sour cream
2 tbsp fresh cilantro, chopped
Salt and black pepper to taste
Optional: Shredded Monterey Jack cheese and sliced avocado for topping


Instructions

In a large pot over medium heat, add a drizzle of oil.
Add the diced onion and cook for 5 minutes until soft and translucent.
Add the minced garlic and cook for 1 minute until fragrant.
Add the chicken breasts, broth, cumin, oregano, chili powder, and green chiles to the pot.
Bring to a gentle boil, then reduce heat and simmer for 20 minutes until the chicken is cooked through.
Remove the chicken breasts and use two forks to shred the meat into bite-sized pieces.
Return the shredded chicken to the pot along with the white beans.
Stir in the sour cream and simmer for 5 minutes.
If thicker consistency is desired, mash a few beans against the side of the pot.
Serve hot with optional toppings.

Notes

Use Greek yogurt as a lighter alternative to sour cream. If you prefer a thicker chili, mash additional beans. Store leftovers in an airtight container in the refrigerator for up to 3 days.
