2 lbs boneless, skinless chicken breasts
1 tbsp olive oil
1 large yellow onion, diced
3 cloves garlic, minced
2 cans (15 oz each) Great Northern beans, rinsed and drained
1 can (4 oz) diced green chiles
4 cups chicken bone broth
1 tsp ground cumin
1 tsp dried oregano
1/2 tsp chili powder
1/2 cup heavy cream
Salt and pepper to taste
Fresh cilantro and lime wedges for garnish


Instructions

Heat olive oil in a large Dutch oven over medium heat and sauté onions for 5 minutes until soft.
Add minced garlic and cook for 1 minute until fragrant.
Add chicken breasts, bone broth, green chiles, cumin, oregano, and chili powder to the pot.
Bring to a gentle boil, then reduce heat to low, cover, and simmer for 20 minutes until chicken is cooked through.
Remove chicken, shred it using two forks, and return the meat to the pot.
Stir in the drained beans and heavy cream.
Simmer for an additional 5 minutes to allow flavors to meld.
