Ingredients
16 oz pasta (penne or rotini)
8 oz feta cheese, one solid block
2 cups cherry tomatoes
1 red onion, chopped
2 cups fresh baby spinach
3 tablespoons extra-virgin olive oil
3 cloves garlic, minced
1 teaspoon dried oregano
1/4 teaspoon red pepper flakes
4 oz grilled chicken strips (optional)
Instructions
Preheat your oven to 400°F (200°C).
Place the block of feta in the center of a 9×13 inch baking dish.
Surround the feta with cherry tomatoes and onion chunks.
Drizzle the vegetables with olive oil, then sprinkle with oregano, red pepper flakes, and minced garlic.
Bake for 25 minutes until the tomatoes have burst and the feta is soft.
While the feta bakes, boil the pasta in salted water according to package directions, reserving 1/2 cup of pasta water.
