Ingredients
2 cups all-purpose flour
3 large eggs
2 cups milk
1/2 cup water
1/4 tsp salt
1 lb button mushrooms, finely chopped
1 large yellow onion, diced
1 cup cooked chicken strips, finely shredded
3 tbsp butter
1/2 cup sour cream
Salt and black pepper to taste
Instructions
Whisk together flour, eggs, milk, water, and salt in a large bowl until smooth; let rest for 10 minutes.
Melt 1 tbsp butter in a skillet, sauté onions until translucent, add mushrooms and cook until golden brown.
Stir in the shredded chicken, remove from heat, fold in sour cream, and season with salt and pepper.
Heat a lightly greased skillet, pour a small ladle of batter, swirl to coat, and cook 1-2 minutes until edges lift; flip and cook for 30 seconds.
Repeat until all batter is used, then place a spoonful of filling in the center of each crepe, fold sides, and roll tightly.
Lightly pan-fry the rolled pancakes in remaining butter for 1-2 minutes per side until crisp and warm.
Notes
Keep leftover pancakes in an airtight container in the fridge for up to 3 days. Reheat in a skillet to maintain crispness.
