Ingredients
2 cans (15 oz each) Cannellini beans, rinsed and drained
4 oz smoked beef, finely diced
1 medium yellow onion, diced
3 cloves garlic, minced
4 cups vegetable broth
2 cups fresh baby kale or spinach
1 tsp dried rosemary
1/2 tsp crushed red pepper flakes
2 tbsp extra virgin olive oil
Salt and black pepper to taste
Instructions
Heat the olive oil in your pot over medium heat.
Add the diced smoked beef and cook for 3-4 minutes until slightly crispy.
Add the onion and sauté until translucent, about 5 minutes.
Stir in the garlic, rosemary, and red pepper flakes, cooking for 1 minute until fragrant.
Pour in the vegetable broth and the rinsed beans.
Bring the mixture to a gentle boil, then reduce heat to low and simmer for 15 minutes.
Use a potato masher to lightly crush about 1/4 of the beans directly in the pot for a creamier texture.
Stir in the fresh kale or spinach and cook for 2 minutes until just wilted.
Season with salt and pepper to taste and serve warm.
Notes
Storage: Keep leftovers in an airtight container in the fridge for up to 4 days. Substitution: If you do not have smoked beef, turkey bacon or smoked chicken breast strips are great high-protein alternatives. Texture: If you prefer a thinner soup, add an extra half cup of broth before serving. Serving Suggestion: Top with a sprinkle of nutritional yeast or a drizzle of high-quality olive oil.
