Ingredients
1 lb (450g) roasted and peeled chestnuts
4 strips of smoked beef, diced
2 tablespoons extra virgin olive oil
1 medium yellow onion, finely diced
2 stalks celery, chopped
1 large carrot, diced
4 cups high-quality chicken broth
1 teaspoon fresh thyme leaves
1/2 cup heavy cream (or full-fat coconut milk)
Sea salt and cracked black pepper to taste
Instructions
Crisp the diced smoked beef in a large pot over medium heat until golden brown, then remove and set aside.
Heat olive oil in the same pot and sauté the onion, carrots, and celery until softened, about 6-8 minutes.
