Ingredients
2 lbs Yukon Gold potatoes, peeled and thinly sliced
8 oz smoked turkey bacon, chopped
2 large yellow onions, thinly sliced
2 cloves garlic, minced
1 cup heavy cream
1 tsp dried thyme
8 oz soft washed-rind cheese (Reblochon or Taleggio), sliced
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Preheat your oven to 400°F (200°C).
Cook the chopped turkey bacon in a large skillet over medium heat for 5 minutes until browned.
Add sliced onions and sauté for 8-10 minutes until golden, stirring in the garlic during the final minute.
Boil potato slices in salted water for 8 minutes until tender, then drain.
Layer half the potatoes in a 9×13 baking dish, add the bacon-onion mixture, then top with remaining potatoes.
Whisk heavy cream, thyme, salt, and pepper, and pour evenly over the layers.
Top with cheese slices and bake for 20-25 minutes until bubbly and golden.
Let rest for 5 minutes before serving and garnish with fresh parsley.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F. If you cannot find Reblochon, use Brie or Camembert as a substitute.
