1 lb chicken breast, cut into bite-sized pieces
1 cup orzo pasta, uncooked
1/2 cup sun-dried tomatoes (packed in oil), chopped
3 cups chicken broth (low sodium)
1/2 cup heavy cream
3 cloves garlic, minced
1 tsp dried oregano
1/2 tsp red pepper flakes
1 cup fresh baby spinach
1/2 cup grated Parmesan cheese
2 tbsp olive oil
Salt and black pepper to taste


Instructions

Heat olive oil in a large skillet over medium-high heat.
Season chicken with salt and pepper and cook for 5-6 minutes until golden and cooked through; remove and set aside.
In the same skillet, sauté minced garlic and chopped sun-dried tomatoes for 1-2 minutes until fragrant.
Add dry orzo to the pan and stir for 2 minutes to lightly toast.
Pour in chicken broth, oregano, and red pepper flakes; bring to a boil, then reduce heat and simmer for 8-10 minutes until orzo is tender.
Reduce heat to low and stir in heavy cream and Parmesan cheese.
Return the cooked chicken to the skillet, fold in the fresh spinach, and stir for 2 minutes until spinach is wilted and the sauce is glossy.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop with a splash of broth if the sauce has thickened too much.
