Perfect for a quick lunch, a gourmet side dish, or a fuss-free meal prep option that brings the sushi experience directly to your bowl without any rolling required.
Ingredients
3 large English cucumbers, thinly sliced
8 oz imitation crab meat, shredded
2 ripe avocados, cubed
1/4 cup rice vinegar (unseasoned)
1 tablespoon toasted sesame oil
1 tablespoon low-sodium soy sauce
1 teaspoon honey
1 tablespoon toasted sesame seeds
1 sheet of nori, cut into thin strips for garnish
Instructions
Prep the cucumbers by thinly slicing them into rounds or half-moons.
Cube the avocados into bite-sized pieces.
In a small bowl, whisk together the rice vinegar, toasted sesame oil, low-sodium soy sauce, and honey until well combined.
In a large mixing bowl, combine the sliced cucumbers, shredded crab, and cubed avocado.
Pour the prepared dressing over the salad mixture.
Gently toss the salad using a spatula, being careful not to mash the soft avocado pieces.
Top with toasted sesame seeds and nori strips immediately before serving.
Notes
Best enjoyed fresh to maintain crispness. If preparing for later, keep the dressing in a separate container and add just before serving to prevent the cucumbers from wilting. For extra protein, you may substitute the imitation crab with shredded poached chicken breast.
