1 lb ground beef
1 cup fresh Thai basil leaves, roughly chopped
1 package rice paper spring roll wrappers
2 cups shredded carrots and cabbage mix
2 cloves garlic, minced
1 tbsp ginger, grated
2 tbsp soy sauce
1 tbsp vegetarian mushroom-based oyster sauce
1 tbsp sesame oil
1 tsp honey
Water for dipping


Instructions

Heat sesame oil in a large skillet over medium-high heat.
Sauté minced garlic and grated ginger for 30 seconds until fragrant.
Add ground beef to the skillet and cook until browned, breaking it up with a wooden spoon for 5-6 minutes.
Stir in soy sauce, oyster sauce, and honey until the mixture is well-coated.
Fold in the shredded vegetables and fresh basil leaves, then remove from heat immediately to maintain vegetable crunch.
Dip a sheet of rice paper into warm water for 5-10 seconds until pliable.
Place the rice paper flat on a clean surface and add a spoonful of the beef mixture in the center.
Fold in the sides of the rice paper and roll tightly until sealed.
Repeat the process until all mixture is used.

Notes

Store leftover rolls in an airtight container in the refrigerator for up to 2 days. Place a damp paper towel between layers to prevent the wrappers from sticking together. For a protein variation, ground chicken or finely diced venison can be used instead of beef.
