Ingredients
2 cups all-purpose flour
1/2 cup powdered sugar
1 cup unsalted butter, softened
2 cups cooked, mashed sweet potatoes
1 cup granulated sugar
2 large eggs
1/2 cup evaporated milk
1 tsp vanilla extract
1 tsp ground cinnamon
1/4 tsp ground nutmeg
Instructions
Preheat your oven to 350°F (175°C) and line your 9×13 baking dish with parchment paper.
Prepare the crust by mixing flour, powdered sugar, and softened butter until crumbly.
Press this mixture firmly into the bottom of your baking pan and bake for 15 minutes until lightly golden.
While the crust bakes, whisk together your mashed sweet potatoes, sugar, eggs, evaporated milk, vanilla, cinnamon, and nutmeg in a large bowl until smooth.
Pour the filling over the warm crust and spread it evenly.
Return to the oven and bake for another 25–30 minutes, or until the center is set.
Let the bars cool completely in the pan before slicing into neat squares.
