2 large sweet potatoes, peeled and cubed into 1-inch pieces
1 lb high-quality chicken sausage, sliced into rounds
1 yellow onion, diced
2 cloves garlic, minced
1 tbsp olive oil
1 tsp smoked paprika
1/2 tsp dried thyme
Salt and black pepper to taste
1/4 cup low-sodium chicken broth
1/4 cup fresh parsley, chopped for garnish


Instructions

Preheat your oven to 400°F (200°C) and lightly grease a 9×13 inch baking dish.
Heat olive oil in a large skillet over medium-high heat and brown the chicken sausage for 5 minutes.
Add diced onions to the skillet and cook for 3-4 minutes until translucent.
Stir in the minced garlic, smoked paprika, and thyme, cooking for 1 minute until fragrant.
Place cubed sweet potatoes in the prepared baking dish.
Pour the sausage and onion mixture over the potatoes and toss gently to combine.
Pour the chicken broth over the mixture and season with salt and pepper.
Cover the dish with foil and bake for 25 minutes.
Remove the foil and bake for an additional 10-15 minutes until potatoes are tender and caramelized.
Garnish with fresh parsley before serving hot.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to maintain texture. You can substitute chicken sausage with lean ground beef if preferred.
