Description
A bright, cool, and sweet watermelon refresher made with chilled watermelon, lime juice, mint, and a touch of honey or maple syrup. Perfect for summer gatherings and refreshing thirsty guests in no time.
Ingredients
6 cups seedless watermelon, cubed and chilled
1/2 cup cold water or coconut water
2 tablespoons fresh lime juice
1 tablespoon honey or maple syrup, optional
8 fresh mint leaves, plus more for garnish
1/8 teaspoon fine sea salt
2 cups ice cubes, for serving
4 small watermelon wedges, for garnish
4 lime slices, for garnish
Instructions
Cut watermelon into small cubes and measure 6 cups; remove any visible seeds.
In a blender, combine watermelon, cold water, lime juice, honey or maple syrup (if using), mint leaves, and sea salt.
Blend for 30 to 45 seconds until smooth.
If preferred silky, strain through a fine-mesh strainer into a pitcher, pressing the fruit with a spoon to extract more juice. Otherwise, use as is.
Taste and adjust sweetness or acidity by adding additional honey or lime juice if needed.
Chill the drink in the refrigerator for 10-15 minutes if not already chilled; fill glasses with ice and prepare garnishes.
Pour into serving glasses and garnish with watermelon wedges, lime slices, and extra mint.
Notes
Use fully chilled watermelon for the best results.
Coconut water adds a tropical twist and slight sweetness.
For a stronger mint flavor, muddle the leaves before adding to the blender.
Add sparkling water for a fizzy version if desired.
