Ingredients
1 cup crushed digestive biscuits or vanilla wafer crumbs
3 tablespoons unsalted butter, melted
1 tablespoon granulated sugar
8 ounces cream cheese, softened to room temperature
1/2 cup powdered sugar
1 teaspoon pure vanilla extract
1 teaspoon fresh lemon juice
1 cup heavy whipping cream, cold
2 cups fresh strawberries, hulled and diced

Instructions
Hull and dice 2 cups strawberries. Toss with 2 tablespoons sugar and 1 teaspoon lemon juice in a bowl; let sit for 10 minutes.
Combine 1 cup crushed cookie crumbs, 3 tablespoons melted butter, and 1 tablespoon sugar in a bowl until moistened.
Using a mixer, cream 8 ounces softened cream cheese until smooth. Gradually add 1/2 cup powdered sugar, 1 teaspoon vanilla extract, and 1 teaspoon lemon juice. Beat in 1 cup cold heavy whipping cream until stiff peaks form.
Layer 1 tablespoon of crumb mixture in each cup. Add 3-4 tablespoons of cheesecake filling, followed by 1/2 cup strawberry mixture. Repeat with another layer of filling. Top with 1-2 tablespoons strawberries and 1 tablespoon extra crumbs.
Chill for 1 hour before serving. Garnish with mint if desired.
Notes
Use clear glasses for a layered visual effect. Let strawberries macerate for at least 10 minutes to release juices. Chill no longer than 8 hours for best texture. Store covered in airtight containers in fridge.
