Ingredients
3 lbs smoked beef roast (pre-cooked)
1 cup brown sugar, packed
1 cup pineapple juice
1/2 cup crushed pineapple
1 tablespoon Dijon mustard
1/4 teaspoon ground cloves
1/4 teaspoon ground cinnamon
Instructions
Preheat your oven to 325°F (165°C).
In a small saucepan over medium heat, combine the brown sugar, pineapple juice, crushed pineapple, mustard, cloves, and cinnamon.
Whisk the mixture until smooth and bring to a gentle simmer for 5–7 minutes until it thickens into a glossy glaze.
Place the smoked beef in a baking dish and score the surface in a diamond pattern to help the glaze absorb.
Brush half of the pineapple glaze generously over the beef.
Bake for 35–40 minutes, brushing with the remaining glaze every 10 minutes to keep the meat moist and shiny.
Remove from the oven once the glaze is bubbly and caramelized, then let the beef rest for 10 minutes before carving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. For a leaner variation, use smoked chicken breast and reduce the bake time by 10 minutes. If the glaze becomes too thick, whisk in a tablespoon of water. Add a pinch of red pepper flakes for heat or top with toasted nuts for a crunchy texture.
