1 lb ground beef (or ground chicken)
1 small onion, finely diced
3 cloves garlic, minced
1 can (28 oz) crushed tomatoes
4 cups beef broth
1 tsp dried oregano
1 tsp dried basil
8 oz lasagna noodles, broken into bite-sized pieces
3 cups fresh baby spinach
1 cup ricotta cheese
1/2 cup grated parmesan cheese
1 cup shredded mozzarella cheese
Salt and pepper to taste


Instructions

In a large pot, brown the ground beef over medium-high heat until no longer pink. Drain any excess fat.
Add the diced onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for another minute until fragrant.
Pour in the crushed tomatoes, beef broth, oregano, and basil. Bring the mixture to a gentle boil.
Add the broken lasagna noodles. Reduce heat to medium-low and simmer for about 10-12 minutes, or until the noodles are tender.
Stir in the fresh baby spinach and cook for 2 minutes until wilted.
In a small bowl, whisk the ricotta and parmesan together. When serving, ladle soup into bowls and top with a dollop of the ricotta mixture and a sprinkle of mozzarella.

Notes
