Ingredients

Scale

2 cups all-purpose flour
3/4 cup granulated sugar
1/2 cup brown sugar, packed
1 tablespoon ground cinnamon
1 teaspoon baking powder
1/2 teaspoon salt
2 large eggs
1/2 cup unsalted butter, melted
1/2 cup Greek yogurt
1 teaspoon vanilla extract
2 cups Granny Smith apples, peeled and finely diced
1 cup powdered sugar (for glaze)
2 tablespoons milk (for glaze)
1/2 teaspoon vanilla extract (for glaze)

Instructions

Preheat your oven to 350°F (175°C) and line your 9×5 inch loaf pan with parchment paper.
In a large bowl, whisk together the flour, granulated sugar, brown sugar, cinnamon, baking powder, and salt.
In a separate medium bowl, beat the eggs with melted butter, Greek yogurt, and vanilla extract until smooth.
Gently fold the wet ingredients into the dry ingredients using a spatula until just combined; take care not to overmix.
Fold in the diced apples carefully into the batter.
Pour the batter into your prepared loaf pan and smooth the top with a spatula.
Bake for 50-55 minutes until a toothpick inserted into the center comes out clean.
Allow the bread to cool completely.
Whisk together the powdered sugar, milk, and vanilla extract for the glaze until smooth, then drizzle over the cooled loaf.

Notes

Storage: Keep the bread in an airtight container at room temperature for up to 3 days or refrigerate for up to 5 days.
Substitutions: You can use Honeycrisp apples if you prefer a sweeter flavor profile.
Texture Check: Ensure your apples are diced into small, uniform pieces to ensure even baking.
