Ingredients
4 large sweet potatoes, peeled and cubed
1/4 cup unsalted butter, softened
1/3 cup milk
1/4 cup brown sugar
1 tsp vanilla extract
1/2 tsp ground cinnamon
1/2 cup all-purpose flour
1/2 cup packed brown sugar
1/3 cup cold butter, cubed
1 cup chopped pecans
Instructions
Place cubed sweet potatoes in a large pot and cover with water.
Bring to a boil and cook for 15 minutes or until fork-tender.
Drain the water well and return potatoes to the pot.
Add softened butter, milk, brown sugar, vanilla, and cinnamon.
Mash until smooth and creamy.
Spread the mixture evenly into a greased 9×13 inch baking dish.
In a small bowl, mix the flour, brown sugar, and cold cubed butter using a fork or pastry cutter until it resembles coarse crumbs.
Stir in the chopped pecans.
Sprinkle the topping evenly over the sweet potatoes.
Bake at 350°F (175°C) for 25 minutes until the topping is golden and bubbling.
Notes
Storage: Keep leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven to keep the topping crunchy.
Substitutions: For a nut-free version, swap the pecans for quick-cooking oats.
Consistency: Ensure the potatoes are drained very well so the casserole doesn’t become watery.
Variation: Add a layer of mini marshmallows on top for the last 5 minutes of baking.
