Ingredients

2 cups all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp salt
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar
1 large egg
1 tsp vanilla extract
1/2 cup apple cider (non-alcoholic, unfiltered)
1/2 cup melted butter (for topping)
1 cup cinnamon-sugar mix (for topping)


Instructions

Preheat your oven to 350°F (175°C) and lightly grease your donut pan with non-stick spray.
In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.
In a separate large bowl, cream the butter and both sugars together until light and fluffy.
Add the egg and vanilla extract to the butter mixture, mixing until smooth.
Gradually alternate adding the dry ingredients and the apple cider to the butter mixture, stirring until just combined.
Transfer the batter into a piping bag and pipe circles into the prepared donut pan, filling each cavity about 3/4 full.
Bake for 10-12 minutes or until a toothpick inserted into the center comes out clean.
Let them cool in the pan for 5 minutes before transferring to a wire rack.
While still warm, brush each donut with melted butter and roll into the cinnamon-sugar mixture.

Notes

Keep these in an airtight container at room temperature for up to 2 days, or freeze for up to a month. If you do not have a donut pan, you can use a muffin tin to make apple cider muffin bites instead.
