Description

This Smoked Gouda & Cabbage Bake is a luxurious, low-carb comfort dish perfect for busy weeknights. Featuring tender shredded cabbage wilted in a rich, velvety smoked gouda cream sauce and topped with savory, crispy beef bacon bits, this bake is a sophisticated twist on a classic vegetable side. It offers a perfect balance of smoky, creamy, and salty flavors that make it a crowd-pleaser for any gathering or a cozy dinner at home.

Ingredients

Scale

1 medium head green cabbage, shredded
6 slices beef bacon, chopped
1 cup heavy cream
2 cups shredded smoked gouda cheese
2 cloves garlic, minced
1/2 teaspoon smoked paprika
Salt and black pepper to taste
Fresh chives for garnish

Instructions

Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
Cook the chopped beef bacon in a large skillet over medium-high heat until crispy, about 5–7 minutes, then remove and set aside.
Add shredded cabbage and minced garlic to the skillet with the rendered beef fat and sauté for 5 minutes until wilted.
Lower the heat, pour in the heavy cream, and stir in half of the smoked gouda and the smoked paprika until the cheese is melted and glossy.
Combine the cabbage mixture with the crispy beef bacon in the prepared baking dish.
Top with the remaining shredded gouda and bake for 20 minutes until bubbly and golden brown.
Garnish with fresh chives before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days and reheat in the oven.
Add a splash of apple cider vinegar while sautéing the cabbage to balance the richness.
For extra texture, top with crushed toasted nuts or keto-friendly breadcrumbs before baking.
