Ingredients
2 tablespoons unsalted butter
1 small yellow onion, finely diced
2 cloves garlic, minced
3 cups broccoli florets, chopped small
4 cups vegetable broth
1/4 cup all-purpose flour
1 cup half-and-half
8 oz smoked gouda cheese, shredded
1/2 cup crispy turkey bacon, crumbled
Salt and black pepper to taste
Instructions
Melt the butter in a large pot over medium heat and sauté the diced onions for 5 minutes until translucent.
Stir in the minced garlic and cook for 1 minute until fragrant.
Sprinkle the flour over the onions and stir constantly for 2 minutes.
Slowly pour in the vegetable broth while whisking continuously to prevent lumps and bring to a simmer.
Add the chopped broccoli, cover, and simmer for 10-12 minutes until fork-tender.
Reduce heat to low, stir in the half-and-half and shredded smoked gouda until the cheese is melted and the soup is glossy.
Season with salt and pepper to taste and top with crumbled turkey bacon before serving.
Notes
Store in an airtight container in the fridge for up to 3 days. Reheat slowly on the stovetop; do not boil or the cheese may separate. For a smoother texture, use an immersion blender for 10 seconds before adding the cheese. If you cannot find smoked gouda, use a sharp cheddar mixed with 1/2 teaspoon of smoked paprika.
