4 slices turkey bacon, chopped
1 medium yellow onion, diced
3 cloves garlic, minced
4 cups fresh broccoli florets, chopped
2 large carrots, diced
4 cups vegetable or chicken broth
2 cups shredded smoked gouda cheese
1 cup heavy cream
2 tablespoons butter
2 tablespoons all-purpose flour
Salt and black pepper to taste
Fresh chives for garnish


Instructions

In a large pot over medium heat, cook the chopped turkey bacon until crispy, about 5-7 minutes. Remove with a slotted spoon and set aside.
In the same pot, melt the butter. Add onions and carrots, sautéing for 5 minutes until softened. Stir in the garlic and cook for 1 minute until fragrant.
Sprinkle flour over the vegetables and stir constantly for 2 minutes to cook out the raw flour taste.
Gradually whisk in the broth, ensuring there are no lumps. Add the broccoli, bring to a boil, then reduce heat to low.
Simmer for 15 minutes until broccoli is fork-tender.
Stir in the heavy cream and smoked gouda. Whisk gently until the cheese is completely melted and the soup is glossy.
Season with salt and pepper to taste. Top each bowl with the reserved crispy turkey bacon and fresh chives.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stove. If you prefer a smoother soup, use an immersion blender to pulse it a few times, leaving some texture behind.
