Ingredients
2 tablespoons olive oil
1 large onion, diced
3 cloves garlic, minced
3 large carrots, sliced into rounds
2 stalks celery, chopped
1 zucchini, chopped
2 cups green beans, trimmed and cut
1 can (14 oz) diced tomatoes, undrained
6 cups low-sodium vegetable broth
1 cup corn kernels
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and black pepper to taste
1 cup cooked shredded chicken (optional)
Instructions
Heat olive oil in a skillet over medium heat and sauté diced onion for 5 minutes.
Stir in minced garlic and cook for 1 minute until fragrant.
Transfer onion and garlic into the slow cooker.
