2 lbs Yukon Gold potatoes, peeled and cubed
4 cups vegetable broth
1 cup heavy cream or full-fat coconut milk
3 cloves garlic, minced
2 tablespoons unsalted butter
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
Fresh chives or crispy turkey bacon bits for garnish


Instructions

Melt butter in a large skillet over medium heat.
Add the cleaned, sliced leeks and sauté for about 5-7 minutes until soft.
Add the minced garlic and cook for 1 more minute.
Transfer the leek mixture into your slow cooker.

Cover and cook on Low for 6 hours or High for 3 hours, until potatoes are tender.
Use an immersion blender to blend the soup to your desired consistency.
Stir in the heavy cream and heat through for 5-10 minutes.
