3 lb beef chuck roast
1 tbsp olive oil
1 large yellow onion, sliced
3 cloves garlic, minced
1 lb baby carrots
1 lb gold potatoes, quartered
2 cups beef bone broth (no alcohol)
2 tbsp Worcestershire sauce
1 tsp dried thyme
1 tsp dried rosemary
2 tbsp cornstarch
2 tbsp cold water
Salt and black pepper to taste


Instructions

Season the beef chuck roast generously on all sides with salt and pepper.
Heat olive oil in a large skillet over medium-high heat and sear the beef for 3-4 minutes per side until deeply browned.
Place the sliced onions, carrots, and potatoes at the bottom of the slow cooker.
Place the seared beef on top of the vegetables.
In a small bowl, whisk together the beef broth, Worcestershire sauce, minced garlic, thyme, and rosemary.
Pour the liquid mixture over the roast in the slow cooker.
Cover and cook on low for 8 hours until the meat is fork-tender.
Remove the beef and vegetables to a serving platter.
Pour the remaining cooking liquid into a saucepan over medium heat.
Whisk in the cornstarch slurry and simmer for 3 minutes until the gravy is thick and glossy.

Notes

Searing is a vital step as it caramelizes the exterior of the meat, adding depth of flavor that cannot be achieved otherwise. Store leftovers in an airtight container in the refrigerator for up to 3 days.
