1/4 cup unsalted butter
1/2 cup whole milk
1.5 lbs lean ground beef
1 medium yellow onion, diced
2 cloves garlic, minced
2 cups mixed frozen peas and carrots
2 tbsp tomato paste
1 tbsp alcohol-free Worcestershire sauce
1 cup beef broth
1 tsp dried thyme
Salt and pepper to taste
Instructions
Boil the potatoes in a large pot of salted water for 15 minutes or until fork-tender.
Brown the ground beef in a large skillet over medium heat, drain excess fat, then add onion and garlic until translucent.
Stir in tomato paste, Worcestershire sauce, beef broth, dried thyme, and frozen vegetables.
Simmer the filling for 5-7 minutes until the sauce thickens.
Drain and mash the potatoes with butter and milk until smooth.
Transfer beef to a baking dish, top with mashed potatoes, and bake at 400°F (200°C) for 20 minutes until golden.
Notes
Ensure your Worcestershire sauce is marked as alcohol-free to adhere to dietary guidelines. For extra flavor, sprinkle a little paprika on top of the potatoes before baking. Store leftovers in an airtight container in the refrigerator for up to 3 days.
