Ingredients

Scale

1 lb ground beef breakfast sausage (mild or spicy)
8 large eggs
2 cups whole milk
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
4 cups frozen cubed hash browns
2 cups shredded sharp cheddar cheese
1/2 cup diced green bell peppers
1/4 cup chopped green onions

Instructions

Preheat your oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish.
Place a skillet over medium-high heat and cook the ground beef sausage for 6-8 minutes, breaking it into crumbles, then drain excess fat.
In a large mixing bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until smooth.
Spread the frozen hash browns evenly in the bottom of the prepared baking dish.
Top the hash browns with the browned beef sausage, diced bell peppers, and 1.5 cups of the shredded cheese.
Pour the egg mixture over the ingredients, ensuring it is evenly distributed.
Sprinkle the remaining 1/2 cup of cheese over the top.
Bake for 35-40 minutes until the center is set and the top is golden brown.
Let it rest for 5 minutes before slicing and serving.

Notes

Keep leftovers in an airtight container in the fridge for up to 3 days. Reheat individual portions in the microwave or oven until warmed through.
