Ingredients
3 lbs Yukon Gold potatoes, peeled and quartered
1/2 cup unsalted butter
1/2 cup whole milk or heavy cream
4 cloves garlic, minced
2 tablespoons fresh rosemary, finely chopped
1/2 teaspoon sea salt
1/4 teaspoon black pepper
Optional: Crumbled smoked chicken strips for garnish
Instructions
Place quartered potatoes in a large pot and cover with cold water by an inch. Bring to a boil and cook for 15-20 minutes until fork-tender.
While potatoes boil, melt butter in a small saucepan over medium heat.
Add minced garlic and chopped rosemary to the butter and sauté for 2 minutes until fragrant.
Drain the potatoes well in a colander and return them to the warm pot to sit for 1 minute to evaporate excess moisture.
Pour the rosemary-garlic butter and warmed milk into the potatoes.
Mash until you reach your desired consistency.
Fold in salt and pepper to taste and serve warm.
