It is a healthy, elegant, and stress-free meal that is perfect for busy weeknights and guaranteed to satisfy the whole family. Simply wholesome, aromatic, and undeniably delicious.

Ingredients

Scale

4 boneless, skinless chicken breasts
2 large Honeycrisp apples, thinly sliced
1 cup unfiltered apple cider (non-alcoholic)
1/2 cup low-sodium chicken broth
2 tablespoons fresh rosemary, finely chopped
2 tablespoons olive oil
2 cloves garlic, minced
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1 tablespoon butter or dairy-free alternative

Instructions

Pat the chicken dry with a paper towel and season both sides evenly with salt, pepper, and one tablespoon of the chopped rosemary.
Heat olive oil in a large skillet over medium-high heat.
Add the chicken and cook for 5-6 minutes per side until golden brown and cooked through, then remove and set aside on a plate.
Add the sliced apples to the same pan and cook for 3-4 minutes until they begin to soften and caramelize.
Add the minced garlic and cook for 1 minute until fragrant.
Pour in the apple cider and chicken broth, scraping the bottom of the pan to release browned bits, and simmer for 5 minutes to reduce.
Stir in the butter and the remaining rosemary.
Return the chicken to the skillet and coat in the sauce for 2 minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop with a small splash of chicken broth to maintain the sauce consistency.
