It is the perfect cozy, wholesome dinner for busy weeknights when you want something flavorful without spending hours at the stove. Ingredients

Scale

2 tablespoons extra virgin olive oil
1 large onion, diced
3 cloves garlic, minced
1 large eggplant, cubed
2 medium zucchini, sliced into half-moons
1 red bell pepper, chopped
28 oz can crushed fire-roasted tomatoes
4 cups vegetable broth
1 teaspoon dried thyme
1 teaspoon dried oregano
1 cup cooked chickpeas
Salt and black pepper to taste
Fresh basil for garnish

Instructions

Heat olive oil in a large soup pot or Dutch oven over medium heat.
Add the diced onion and cook for 5 minutes until soft and translucent.
Add minced garlic and cook for 1 minute until fragrant.
Add the cubed eggplant, zucchini, and bell pepper, sautéing for 7–8 minutes until slightly softened and browned.
Pour in the fire-roasted tomatoes, vegetable broth, thyme, and oregano.
Bring to a gentle boil, then reduce heat to low and cover.
Simmer for 15 minutes.
Stir in the chickpeas and season with salt and pepper to taste.
Serve hot with a fresh sprinkle of basil.

Notes

Storage: Keep leftovers in an airtight container in the fridge for up to 4 days; it tastes even better the next day.
Substitutions: For extra savory depth, try adding sliced seared chicken breast or smoked turkey strips.
Texture: For a creamier soup, use an immersion blender to pulse the soup a few times.
