1/2 cup pumpkin puree
1 teaspoon vanilla extract
1 1/2 cups old-fashioned rolled oats
4 oz cream cheese, softened
1/4 cup butter, softened
1.5 cups powdered sugar
1 teaspoon vanilla extract


Instructions

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
In a large bowl, beat the softened butter with both sugars until light and fluffy.
Add the pumpkin puree and vanilla, mixing until smooth.
Gradually add the flour mixture into the wet ingredients.
Fold in the rolled oats until just combined.
Scoop tablespoon-sized balls onto the baking sheet.
Bake for 10–12 minutes until the edges are golden.
Let the cookies cool completely on a wire rack.
To make the filling, beat the cream cheese, butter, powdered sugar, and vanilla until creamy.
Pipe or spread the filling onto the flat side of one cookie and top with another.
