2 large eggs
1 1/4 cups milk
1/2 cup pumpkin puree
2 tbsp melted butter
1 tsp pumpkin pie spice
1 tbsp maple syrup
8 oz mascarpone cheese
2 tbsp powdered sugar
1/2 tsp vanilla extract


Instructions

In a large bowl, whisk together flour, eggs, milk, pumpkin puree, melted butter, pumpkin pie spice, and maple syrup until the batter is smooth.
Preheat a large non-stick skillet over medium heat and lightly grease with butter.
Pour 1/4 cup of batter into the pan and tilt to coat the surface thinly and evenly.
Cook for 1-2 minutes until edges lift, then flip and cook for 30 seconds.
In a separate bowl, whip the mascarpone with powdered sugar and vanilla extract until smooth.
