Thick slices of brioche are stuffed with a velvety blend of cream cheese and pumpkin puree, then dipped in a spiced custard and pan-seared to golden perfection. Ingredients
8 slices thick-cut brioche or challah bread
4 oz cream cheese, softened
1/4 cup pumpkin puree
2 tbsp maple syrup
3 large eggs
1/2 cup whole milk
1 tsp vanilla extract
1 tsp pumpkin pie spice
2 tbsp unsalted butter
Instructions
In a small bowl, whisk together the softened cream cheese, pumpkin puree, and 1 tablespoon of maple syrup until smooth.
Use a serrated knife to cut a pocket into the side of each bread slice and carefully spread a spoonful of the pumpkin mixture inside each.
In a shallow dish, whisk together the eggs, milk, vanilla, pumpkin pie spice, and the remaining maple syrup.
Dip each stuffed bread slice into the custard for approximately 10 seconds per side.
Heat the butter in a large skillet over medium heat.
Cook the bread slices for 3-4 minutes per side until they are golden brown and crispy.
Notes
Stale bread works best for soaking up the custard without becoming soggy. If your bread is fresh, leave it out for an hour to dry. Store leftovers in an airtight container in the fridge for up to 2 days and reheat in a toaster oven.
