12 oz pasta of choice
1 cup cottage cheese
3/4 cup pumpkin puree
2 cloves garlic, minced
1/4 cup reserved pasta water
1 tbsp olive oil
1 tsp dried sage
1/2 tsp red pepper flakes (optional)
Salt and black pepper to taste
Optional: Crispy beef bacon crumbles


Instructions

Bring a large pot of salted water to a boil and cook pasta until al dente.
Reserve 1/2 cup of starchy pasta water before draining.
Combine cottage cheese, pumpkin puree, garlic, sage, and red pepper flakes in a blender; process until smooth.
Heat olive oil in a large skillet over medium heat.
Pour the pumpkin mixture into the skillet and heat for 3 minutes.
Add the cooked pasta to the skillet and toss, adding reserved pasta water as needed to reach a glossy consistency.
