Ingredients
1/2 cup pumpkin puree (not pumpkin pie filling)
2 cups graham cracker crumbs
1 cup powdered sugar
1/4 cup cream cheese, softened
1 tsp ground cinnamon
1/2 tsp pumpkin pie spice
1 cup white chocolate chips (melted for coating)
Optional: Extra cinnamon or crushed graham crackers for dusting
Instructions
In a large mixing bowl, combine the pumpkin puree and softened cream cheese until smooth and fully incorporated.
Add the graham cracker crumbs, powdered sugar, cinnamon, and pumpkin pie spice. Mix until a thick dough forms.
Scoop out rounded tablespoons of the mixture and roll them into balls with your hands.
Place the balls on a parchment-lined baking sheet.
Chill the truffles in the refrigerator for 20-30 minutes to firm up.
Melt the white chocolate in a microwave-safe bowl in 30-second intervals, stirring between each, until glossy and smooth.
Using a fork, dip each chilled truffle into the melted white chocolate, tapping off the excess.
Place back on the parchment paper and sprinkle with a little extra cinnamon before the chocolate sets.
Notes
Storage: Keep these truffles in an airtight container in the refrigerator for up to 5 days.
Texture Check: If the dough feels too sticky, add an extra tablespoon of graham cracker crumbs.
Coating Tip: If you do not have white chocolate, you can roll these in crushed graham crackers or chopped nuts.
