1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
6 tablespoons unsalted butter, melted
16 oz cream cheese, softened
1/2 cup granulated sugar
1 large egg
1/2 teaspoon vanilla extract
1 cup pumpkin puree
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg


Instructions

Preheat your oven to 350°F and line a 9×9 inch pan with parchment paper.
Combine graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl.
Press the crumb mixture firmly into the pan and bake for 8 minutes.
Beat the softened cream cheese and 1/2 cup sugar until light and fluffy.
Add the egg and vanilla extract to the cream cheese mixture, mixing until combined.
Remove 1 cup of the cheesecake batter and set aside.
Stir the pumpkin puree, cinnamon, and nutmeg into the remaining batter.
Pour the pumpkin mixture over the crust.
Dollop the reserved plain batter on top and swirl with a knife to create a marbled effect.
Bake for 30-35 minutes until the center is set but slightly jiggly.
Cool to room temperature, then refrigerate for 3 hours before slicing.
