Ingredients
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
6 tbsp unsalted butter, melted
16 oz cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 cup canned pumpkin puree
1 tsp vanilla extract
1 tsp pumpkin pie spice
Instructions
Preheat your oven to 350°F (175°C) and line a 9×9 inch baking pan with parchment paper.
In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter; press into the pan and bake for 8 minutes.
Beat cream cheese and 1/2 cup sugar until smooth, then add eggs one at a time.
Remove 1/2 cup of the plain batter and set aside.
Mix pumpkin puree, vanilla, and pumpkin pie spice into the remaining batter.
Pour the pumpkin mixture over the crust, dollop with reserved plain batter, and swirl with a knife.
Bake for 30-35 minutes until the edges are set and the center has a slight jiggle.
Cool completely and refrigerate for 4 hours before slicing.
