Ingredients

Scale

1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon pumpkin pie spice
1 cup canned pumpkin puree
1 cup granulated sugar
1/2 cup brown sugar, packed
2 large eggs
1/2 cup vegetable oil
1/4 cup Greek yogurt
1 teaspoon vanilla extract

Instructions

Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
In a large bowl, whisk together the flour, baking soda, baking powder, salt, and pumpkin pie spice.
In a separate bowl, whisk the pumpkin puree, sugars, eggs, oil, yogurt, and vanilla until smooth.
Pour the wet ingredients into the dry and fold gently until just combined.
Pour batter into the prepared pan.
Bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Store in plastic wrap at room temperature for up to 3 days or in the refrigerator for up to 1 week. If you are out of pumpkin pie spice, create your own by mixing cinnamon, ginger, cloves, and nutmeg.
