Ingredients
2 tablespoons unsalted butter
1 small yellow onion, diced
2 cloves garlic, minced
3 cups pumpkin puree
2 cups non-alcoholic apple cider
2 cups vegetable broth
1 cup heavy cream
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
4 strips turkey bacon, crispy and crumbled
Salt and black pepper to taste
Instructions
Melt butter in a large pot over medium heat.
Add the diced onion and cook for 5 minutes until translucent.
Stir in the minced garlic and cook for 1 minute until fragrant.
