Ingredients
1 can (15 oz) black beans, rinsed and drained
1 cup pumpkin puree (not pie filling)
1 tablespoon olive oil
1 medium yellow onion, diced
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon smoked paprika
Salt and black pepper to taste
8 small corn or flour tortillas
Optional toppings: fresh cilantro, avocado slices, lime wedges, crumbled feta or cotija cheese
Instructions
Heat the olive oil in a large skillet over medium heat.
Add the diced onion and cook for 3 to 5 minutes until translucent and soft.
