Ingredients
1.5 lbs ribeye steak, shaved or sliced paper-thin
2 tablespoons vegetable oil
1 large yellow onion, thinly sliced
8 oz cremini mushrooms, sliced
1 green bell pepper, thinly sliced
4 sub rolls, toasted
8 slices provolone cheese
Salt and black pepper to taste
Instructions
Prep the meat by slicing it against the grain into thin, bite-sized strips and season lightly with salt and pepper.
Heat one tablespoon of oil in a large skillet over medium-high heat and sauté onions, peppers, and mushrooms for 5-6 minutes until soft.
Remove vegetables from the pan and add the remaining oil.
Sear the beef in a single layer for 2 minutes, then stir-fry for 2-3 minutes until cooked through.
Return the vegetables to the pan and mix with the beef.
Divide the mixture into 4 piles and place two slices of provolone on top of each.
Cover the pan for 1 minute until the cheese is melted.

Notes
Place the steak in the freezer for 30 minutes before slicing to make it easier to cut into thin, paper-like strips. Ensure the pan is hot before adding the beef to achieve a nice crust.
