Ingredients
2.5 lbs Yukon Gold potatoes, peeled and quartered
1/2 cup unsalted butter, softened
3/4 cup freshly grated Parmesan cheese
1/2 cup heavy cream, warmed
1 teaspoon garlic powder
1/2 teaspoon sea salt
1/4 teaspoon black pepper
2 tablespoons fresh chives, finely chopped
Instructions
Place the quartered potatoes in a large pot and cover with cold water and a pinch of salt.
Bring to a boil, then simmer for 15-18 minutes until fork-tender.
Warm the heavy cream and butter in a small saucepan over low heat until melted.
Drain the potatoes and return them to the warm pot for 1 minute to evaporate excess moisture.
Mash the potatoes until smooth using a ricer or masher.
Slowly fold in the cream and butter mixture.
Add the Parmesan, garlic powder, salt, and pepper, stirring until glossy.
Garnish with chives and serve immediately.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Use a ricer for the smoothest, fluffiest texture.
