Ingredients
1 ½ cups all-purpose flour
½ cup granulated sugar
½ cup brown sugar, packed
1 tsp baking soda
½ tsp baking powder

1 cup finely grated zucchini, squeezed dry
2 large eggs
½ cup vegetable oil
1 tbsp fresh orange zest
2 tbsp fresh orange juice
1 tsp vanilla extract
Instructions
Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
In a medium bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
In a large bowl, beat eggs, oil, sugars, orange zest, orange juice, and vanilla until smooth.
Gently fold the grated, dried zucchini into the wet mixture.
Gradually stir in the dry ingredients until just combined.
Pour the batter into the prepared loaf pan.
Bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean.
Let it cool in the pan for 10 minutes before removing to a wire rack to cool completely.
