12 oz penne or rotini pasta
3 cups low-sodium chicken broth
1 cup heavy cream
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon onion powder
1 teaspoon dried Italian herbs
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Heat olive oil in a large skillet over medium-high heat.
Add the cubed chicken, seasoning with salt, pepper, and onion powder, and cook for 5-6 minutes until golden and cooked through.
Remove the chicken from the pan and set aside.
In the same pan, cook the minced garlic for 1 minute until fragrant.
Pour in the chicken broth, heavy cream, and dried herbs, then bring to a gentle simmer.
Add the dry pasta to the liquid, cover, and simmer for 10-12 minutes, stirring occasionally.
Return the cooked chicken to the skillet.
Stir in the Parmesan cheese until melted and the sauce is smooth.
Garnish with fresh parsley before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. When reheating, add a small splash of chicken broth or water to restore the creaminess of the sauce.
