Ingredients
1 lb ground beef
1 cup long-grain white rice, uncooked
2 cups beef broth (low sodium)
1 cup frozen mixed vegetables (carrots, peas, corn)
1 small yellow onion, finely diced
2 cloves garlic, minced
1 tsp dried oregano
1/2 tsp paprika
Salt and black pepper to taste
1 tbsp olive oil
Fresh parsley for garnish
Instructions
Heat the olive oil in a large skillet over medium-high heat.
Add the ground beef and diced onion, cooking for 5–7 minutes until beef is browned and onions are soft.
Stir in minced garlic, oregano, and paprika, sautéing for 1 minute.
Add the uncooked rice to the skillet and stir for 1 minute to toast the grains.
Pour in the beef broth and bring the mixture to a gentle boil.
Reduce heat to low, cover with a tight-fitting lid, and simmer for 15–18 minutes.
Fold in the frozen vegetables, replace the lid, and cook for an additional 3 minutes.
Season with salt and pepper to taste and garnish with fresh parsley.
