Ingredients

Scale

2 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon Italian seasoning
4 slices of crusty ciabatta or sourdough bread
4 tablespoons basil pesto (nut-free if preferred)
4 slices fresh mozzarella cheese
1 cup fresh baby spinach or arugula
1/4 cup roasted red peppers
Salt and black pepper to taste

Instructions

Slice the chicken breasts horizontally to create thinner cutlets.
Season both sides of the chicken generously with salt, pepper, and Italian seasoning.
Heat olive oil in a large skillet over medium-high heat.
Cook the chicken for 4-5 minutes per side until golden brown and the internal temperature reaches 165°F.
Toast the bread slices in the skillet or a toaster until golden and crisp.
Spread a generous tablespoon of pesto onto one side of each bread slice.
Place a chicken cutlet on the bottom bread slice, top with a slice of mozzarella and roasted red peppers.
Broil the open-faced sandwich for 1 minute to melt the cheese until bubbly.
Top with fresh greens, close the sandwich, and serve immediately.

Notes

Store cooked chicken in an airtight container for up to 3 days. Assemble the sandwich fresh to keep the bread from getting soggy. Turkey breast can be substituted for chicken.
