Ingredients
For the Muffins:
2 cups all-purpose flour

1/2 cup vegetable oil or melted unsalted butter
2 large eggs
1 teaspoon vanilla extract

For the Cinnamon Streusel:
1/2 cup all-purpose flour
1/3 cup packed light brown sugar
1/4 cup cold unsalted butter, cut into small cubes
1 teaspoon ground cinnamon
Instructions
1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
2. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg. Make sure there are no clumps.
3. In a separate medium bowl, whisk together the milk, oil (or melted butter), eggs, and vanilla extract until well combined.
4. Pour the wet ingredients into the dry ingredients. Stir with a spatula or wooden spoon until *just* combined. Don’t overmix; a few small lumps are okay!
5. Gently fold in the diced apples.
