2 tablespoons olive oil
1 pound boneless, skinless chicken breasts, diced into 1-inch cubes
1 small yellow onion, finely diced
3 cloves garlic, minced
1/2 cup sun-dried tomatoes, drained and chopped
4 cups low-sodium chicken broth
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes
1 cup heavy cream
2 cups fresh baby spinach
1/2 cup freshly grated Parmesan cheese
Salt and black pepper to taste
Fresh basil for garnish


Instructions

Heat the olive oil in a large pot or Dutch oven over medium-high heat.
Add the diced chicken, season with salt and pepper, and cook until browned on all sides, about 5-6 minutes.
Remove the chicken from the pot and set aside.
In the same pot, add the diced onion and cook until translucent, about 3 minutes.
Stir in the minced garlic and cook for another minute until fragrant.
Add the sun-dried tomatoes, oregano, and red pepper flakes.
Pour in the chicken broth, scraping up any browned bits from the bottom of the pot.
Bring to a gentle boil, then reduce heat to low.
Return the cooked chicken to the pot.
Pour in the heavy cream and simmer for 5 minutes until slightly thickened.
Stir in the spinach and Parmesan cheese until the spinach wilts and the cheese melts.
Serve hot, garnished with fresh basil.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop over low heat to prevent the cream from separating. You can substitute heavy cream with half-and-half for a lighter version.
